Moussaka

Adapted from Taste.com.au
Serves 6

1 - 2 large eggplants, thinly sliced
1/4 cup (60ml) olive oil
2 cloves of garlic, minced
500g - 750g lamb mince
1 onion, chopped
1 tsp allspice
800g can tomatoes
1/2 cup water
1/4 cup chopped parsley
1 small zucchini, grated

50g butter
2 tbs plain flour
1 1/2 cups milk
pinch of nutmeg
1 egg
1 cup grated cheddar

Preheat oven to 180°C.

In batches, shallow fry the eggplants, thinly sliced, in a little olive oil until golden. (I sprayed the eggplant with some canola oil and shallow fried)

Brown the mince and onion. Add the allspice, tomatoes, zucchini and water. Simmer for 20-30 minutes. Stir in the parsley.

Place some eggplant on the bottom of an oven-proof dish. Make sure it's large enough to hold it all or you could probably divide it into 2 lasagne type pans (or 6 individual serving dishes). Top with half the mince. Keep layering with eggplant & mince mix. Finishing with eggplant on the top layer.

Melt the butter. Stir in plain flour. Whisk in the milk. Stir over medium heat until it boils. Whisk in pinch of nutmeg and 1 egg. Pour over dish(or dishes) and sprinkle with grated cheddar.

Bake for approximately 20-30 minutes.


**This was a little on the water side once it had finished cooking. If I had known it was going to be like this I would have omitted the extra water or even thickened up the meat mixture.

*** You can also add different spices if you wish. Next time I might try chilli or paprika as my boys often complain its not spicy enough! It needs more zing!

I've never had egg plant. Thought a friend of mine really raves about it. Not even sure I can get it at the local grocery, but might have to check.

Hi Audrey, I am sure he will love the ravioli. You can't go wrong with it. My 13 yr old has even cooked this for us for dinner.
Eggplant is nice, it kind of takes on the flavour of whatever you cook it with. I hope you like it if you try it.

I did find this version a little oily so I'm thinking of a way to make this so its less greasy. Perhaps grilling the eggplant might be the trick.
