Slow Cooker Spicy Peanut Chicken


6-8 chicken thigh fillets, skin off
1 large potato, diced
1 onion, chopped
4 cloves of garlic, crushed
1 cup peanut butter, you could use less or more if you wish.
2 tablespoons plain flour
1 x 400g can of crushed tomatoes
1 1/2 teaspoons ground cumin
1/2 teaspoon chilli powder, I used 1 tablespoon fresh crushed chilli - we like it spicy
1 teaspoon tumeric
1 teaspoon brown sugar
1 tablespoon soy sauce

Place onion & potatoes in the slow cooker. Then lay the chicken on the top.

Mix garlic, peanut butter and flour together. Slowly add the can of tomatoes. This will make a thick sauce. You can add salt & pepper at this stage if you wish.

Stir in the remaining ingredients. Pour over chicken.

Slow cook on low for 5 to 6 hours. Or on high for 3 hours.

Serve on a bed of boiled rice.

*I added grated carrot and zucchini to the dish.

In fact I am making my slow cooked corned beef (silverside) tonight. Yum!

Hi, Blossy...followed from your post on Soooz Says Stuff, i am delighted that you are a fellow Aussie, as well.

I love the look of the Spicey chicken, and have decided to try it for tonight. With the colder weather arriving soon i'll be using the slow cooker far more often.

I hope you like the spicy chicken. It really was delicious although they other half thought it was a curry to start with :/ he still enjoyed it though.
